Let’s be real—Passover can be a little carb-deprived, and by day four, you’re side-eyeing that matzah like it personally wronged you. Enter Matzah-a-Roni, the mac and cheese dupe that says, “Yes, I’m still technically following the rules, but I refuse to suffer.” This Passover-approved comfort dish swaps out pasta for broken bits of matzah, which soak up a gloriously gooey, cheese-laden sauce like they were always meant to. Is it exactly like mac and cheese? No. Is it the best thing that’s going to happen to you between now and your first post-Passover bagel? Absolutely. Plus kids especially love this recipe during Passover week, which can feel like a long time without bread, pizza, and pasta!

step by step instructions

  1. Beat eggs and pour over farfel in a large bowl
  2. Mix cheese, sour cream, margarine, milk and salt together and pour over the farfel and mix well.
  3. Pour the mix into a sprayed 9″x13″ pan. Cover and bake at 350°F for 30 minutes
  4. Uncover and bake for an additional 10-15 minutes or until slightly brown. Sprinkle some cheddar cheese on top and broil for a couple of minutes
